- Zucchini – 1 you.
- Garlic – 3 teeth.
- Sunflower oil – 2 tablespoons.
- Soy sauce – 2 tablespoons.
- Boil water with salt and cook the noodles for 3 minutes.
- Meanwhile, cut all fine slices vegetables and fry them in oil over medium heat.
- Once the soba is cooked, drain it into a strainer and add it to the vegetables.
- Distress the dish with soy sauce and sauté for 2 or 3 minutes.
The dish can be cooked without soy sauce, replacing it with salt, sugar (¼ teaspoon of each) and a few drops of lemon juice.
With chicken

- SOBA – 300 g.
- Chicken fillet – 2-3 medium pieces.

- Bulgarian pepper – 2 peppers.

- Soy sauce – 100 ml for marinade and 2 tablespoons for the plate.
- Sunflower oil – 2 tablespoons.
- Cut the fillet into dice or fine strips. Pour the soy sauce on the cut meat and let marinate for half an hour.
- Cut the vegetables and boil the noodles for 5 minutes.
- While the noodles boil, fry the chicken in oil.
- When the fillets are crispy, the vegetables, soy sauce and a couple of tablespoons of water are added to the pan.
- Carry meat and boiling vegetables and mix with noodles.
Spicy
A more spicy version with chicken. The ideal is to cook the plate on a wok. Ingredients:
- SOBA – 300 g.
- Chicken fillet – 2 gr.
- Sweet pepper – 1 you.
- Carrot – 1 Carrot.
- Zucchini – 1 medium piece.
- Vegetable oil – 2 tablespoons.
- Dry ginger – 2 tbsp.
- Turmeric – 1 tablespoon.
- Teriyaki sauce – 4 tablespoons.
- Gut to taste.
- Marinate the meat in teriyaki sauce with turmeric for 20-30 minutes.
- Once the meat is marinated, boil the noodles for 5 minutes.
- Meanwhile, cut the sliced vegetables, put them in a pan, add the ginger and skip them until they are brown.
- Remove the noodles from a strainer. Turn off the pot, mix the soba with the vegetables and let the lid with the lid slowly.
You can decorate the plate with sesame seeds.
Japanese soup
A dish very close to traditional Japanese cuisine. It is an unknown soup for the western eye: noodles, meat and cooked vegetables are poured into a small amount of broth directly on the plate. Ingredients:

- Reserve the meat and, in the same pan, fry the cut mushrooms, onion, garlic, ginger and sesame seeds for 5 minutes.
- Then add to the mixture a pair of tablespoons of water, chicken broth and soy sauce. It is left to stew with the lid over low heat for 5-7 minutes.
- While the mushrooms and vegetables are cooked, the spoe noodles are boiled, rins and drained in a strainer.
- Before eating, place the spoe noodles on a flat plate, then the meat and pour the vegetables and the broth.
