If the environment does not meet the indicated criteria, the grain protein will begin to decompose and the fats will be placed. This will not only spoil the taste of dry fruit, but will also reduce its nutritional quality.
When the shell of the dry fruit is broken, microorganisms and fungi are introduced into it and poisonous protective juices are released, which make the seed dangerous. To keep intact grains, they dry or have before storing them. Additional selection is necessary: wet seeds are additionally dry, too dry, rotten or sick seeds are discarded or eliminated.
For drying ovens are used or toasted without oil. Too cooked grains lose their aroma and flavor. The finished product must always cool. The seeds can be grinding and packaged in plastic or cotton bags.
For storage, whole chanars are stacked in plastic, wood or canvas bags, stacked against the counterpart, shelves or trunks. The place remains clean and ventilated regularly. If moisture increases, the grains are separated, the room is fumigated (it burns with sulfur) and stacked again.
