To elaborate it, it is needed

  • 1 l of milk;
  • 6 tablespoons of lemon juice (or 3 tablespoons of wine vinegar);
  • 1 teaspoon salt.

Rinse the saucepan with water. Pour the milk in it and heat it at 82 ° C (it is convenient to use a food thermometer; if not, heat until the product is hot but far from boiling). Reduce the heat and add the acidic component. Remove constantly until it reaches a temperature of almost 90 ° C. Remove from heat, cover and let cool completely, preferably all night.

In the morning or after a few hours, the milk will curdle, forming a serum. Line a strainer with a cloth or gauze and pour the curd mixture into it. Tighten slightly and let stand in a cool place until the curd has hardened.

Prepare small drilled background molds, take them with the curd mixture, put them in the refrigerator and let them dig for about 3 days.

After 3 or 4 days, remove the cheese base from the refrigerator. Place it on a plate, sprinkle it with salt, cover it with a cloth and let it mature in the refrigerator. Turn the cheeses every day, season with salt and cover again. After another 4 days you will have a good fresh cheese.


Heat the milk at 80 ° C. Cool naturally and let ferment at room temperature for at least 2 days. If there is no time, add the lemon juice (1 tablespoon per 1 liter).

Heat again the acidified curd, this time at a temperature of about 60 ° C (the higher the temperature, the dry the curd). Then, extend the mixture of curd on a strainer, lined with a gauze, let it drain and then exprim it (the more it expresses it, the dry the curd will be).

How to keep correctly

It is important that the product be protected from the air. Ideally, keep it in the refrigerator in a covered container. The freezer is ideal for lon g-term storage. The product will keep its flavor and texture. Be patient when defrosting. Let the product leave in the freezer for 24-48 hours.
